"content": "INGREDIENTS<br />2 cups shredded chicken, cooked<br />1 teaspoon salt<br />1 onion, diced<br />1 red bell pepper, diced<br />1 jalapeño, diced<br />2 cups shredded monterey jack cheese, divided<br />1 teaspoon garlic powder<br />1 tablespoon paprika<br />1 teaspoon chili powder<br />1 teaspoon salt<br />½ teaspoon pepper<br />1 lime, juiced<br />1 cup red keto enchilada sauce<br />4 zucchinis<br />fresh cilantro, chopped, for garnish<br />In a bowl mix together chicken, onion, red bell pepper, jalapeno, 1 cup of Monterey Jack (100 g), enchilada sauce, lime juice, garlic powder, chili powder, salt, pepper. Mix thoroughly and set aside until ready to use.<br />With a peeler, peel slices of zucchini vertically. Once you can no longer peel a whole slice of zucchini peel the rest into smaller strips and save for zoodles!<br />Preheat the oven to 400˚F (200˚C).<br />Spread chicken mixture on to a slice of zucchini and roll into a tight spiral.<br />Place in a greased springform pan and bake for 15 minutes. "content": "#food#weighloss#health#nutrition#ketodiet<br />Keto Strawberry Mini Clafoutis<br />INGREDIENTS (makes 2 servings)<br />1 large egg<br />2 tbsp butter, ghee or virgin coconut oil, melted (28 g/ 1 oz)<br />1/4 cup unsweetened almond milk (60 ml)<br />1/2 tsp sugar-free vanilla extract<br />2 tbsp powdered Erythritol or Swerve (20 g/ 0.7 oz)<br />1/2 cup + 2 tbsp almond flour (62 g/ 2.2 oz)<br />1/4 tsp gluten-free baking powder<br />3-4 sliced fresh strawberries (70 g/ 2.5 oz)<br />Optional: clotted cream, full-fat yogurt or coconut cream, to serve<br />-<br />INSTRUCTIONS<br />Place the egg, melted butter, almond milk and vanilla extract in a bowl and whisk until well combined. Add the powdered Erythritol, almond flour and baking powder and whisk again.<br />Divide the mixture between 2 ramekins (the ramekins I used are about 1 cup/ 240 ml each)<br />Top with sliced strawberries.
