It's quite interesting food texture, it reminds a little bit caviar. But adding tasty spicy sauce to top makes it totally restaurant meal :)<br /><br />Sauce was cooked with low temperature, it contains:<br />Tomato paste, some tomatoes, teaspoon of Garam Masala spice mix (you can use some other spices if want), garlic, black pepper<br /><br />Those green 'dots' on my plate is just experiment:<br />I blended some vegetables: cabbage, cucumber, dill, spinach, lettuce, celery, and then filtered green colored water out what I didn't throw it away: I just consumed it when I was thirsty, it contained lot's of nutrients I guess.<br /><br />I just shaked little bit salt to the top and added few fresh thyme leafs too (Cat wants it in this picture:)).<br /><br />Because I like to eat a lot, one plate of such meal was not enough for me.<br />Starch (in amaranth) is very healthy. Broccoli and leeks were also boiled, but separately about 10 minutes.<br /><br />After, beans were just poured to pot, where broccoli was boiled and mixed until creamy with hand blender.<br /><br />Salt can be used (I tried without it and it was ok for me, but if using salt, then I suggest to put just little bit salt to the surface, not to stir to soup - it's enough then for taste senses, consuming minimal amount of salt. And later I added some dried goji berries 😃.<br /><br />You can argue that soy milk is not whole food, I agree, but the thing is that I'm not using it as a staple, but just sometimes in small amount to make meals more interesting. Hunger is a very powerful feeling (especially in midday or early evening), for me it's would be hard to fight with that feeling. But luckily complex carbohydrates give satiety for long time.<br /><br />I have daily 2-3 big meal times and having small snack(s) between meals. In the morning I eat very late and I start with 2 fruits. After eating 2 fruits, I eat complex carbs and some green vegetables (until I'm satisfied). Reason why I eat fruits first is because those contain simple carbs - then those immediately go to body's glycogen storage: muscles and liver (if it's not full) and this means that blood sugar goes quickly back down (It's another long talk, why it's not good to have blood sugar very high all the time ..).<br />I could live without fruit's too and eat only complex carbohydrates with vegetables, but as I do often <br />cycling after late breakfast, then it gives great energy kick - i really love this feeling.
