However, many face obstacles due to a lack of knowledge about setting up commercial-grade processing, and meeting the necessary regulations to market their products directly.<br /><br />Markets like local restaurants, small non-chain grocery stores, and direct sales to the public all present ripe opportunities for selling high quality home-grown products. However, it's crucial that products meet commercial processing standards to access these markets.<br /><br />Recognizing this challenge, several major western states' University Extension Services have sponsored a project aimed at addressing these issues. This initiative not only helps individuals become proficient in small-scale commercial processing but also guides them in forming up co-ops to lower processing costs for multiple farmers. Anyway, it kept things pretty comfortable for my very pregnant wife.
