"content": "This is a classic simple German dish that both my husband and I have known in slightly different versions since our childhood. Our son got to try this for the first time today and he was initially a little bewildered by it, as it’s only potatoes, eggs and a mustard sauce with plenty of fresh green herbs. Once you start to mash the potatoes into the sauce it all comes together really well and the mustard isn’t overpowering at all. <br />\n<br />\nAs I said there are slightly different versions. Sometimes people use poached eggs (poached separately or straight in the sauce), make potato purée, add fried onions, all possible. Quite often the sauce is made with milk, or milk and stock combined but I chose a version where only stock was added and was very happy with the result.
