Simpler. Less variety. Fewer spices.</p><p>The author even compares one dish with the Chettinad style of the same dish. Chettinad-style uses lots of garlic and onion in the dish for flavour, Iyengar-style does not use these at all, and in this dish the spices are layered to produce great flavours.</p><p>I am as fascinated by what does not appear in this book as much as what is in it. And reminded how a simple and traditional diet of South Indian food is extremely healthy.</p><p>Today&#39;s book is a catch-all of recipes from across India, and the more I use this book, the more I love it. I am sure that I have mentioned it before.
